The first week was phenomenal. I was armed with knowledge and a fridge of protein, and a helluva lot of determination. The first two weeks are known as Induction, and are the strictest. It's what everybody thinks Atkins is.
A few of the meals I enjoyed:
Omelets with ham and cheese
Turkey sausage
Caesar salads, with and without chicken
Turkey meatballs and homemade marinara (marinara in moderation)
Chicken fajita filling with green, red and yellow peppers
Marinated flank steak (wowza, was that good!)
Spring salads
Zucchini casserole (to which Joe actually enjoyed...yeah!)
Parmesan crusted chicken tenders
Cheeseburger with pickles, no bun
Scrambled eggs
Grilled pork chops
Spiral cut ham
All in one chicken bake (chicken, diced tomatoes and green beans, green beans in moderation because I'm on Induction)
Better and tastier menu that I normally enjoy! My family's been VERY happy and so have I...during the first week I was down 6 pounds! I know some of that was water weight but still...I'm thrilled with the success and getting over the first hurdle.
I tried a pair of my summer capris on as well as my favorite 3 season pants on Saturday. They've been tight for some time, so I couldn't believe that they actually FIT. Not sort of fit in a muffin top kind of way, they actually fit!
I even bought those Ketostix and have been testing every day, and am pleased to report that I've been burning fat every day since day 3. Burning fat and not hungry!? I could get used to this!!!
